The extra-virgin "Dell'Orto" D.O.P. Colline Salernitane olive oil is a product obtained from a single selection of olives cultivated in the homonymous farm extended over 8 hectares. It is located about 60 Km. From Salerno on the hills that surround the gorgeous scenery of the Sele river valley, crossroads for the Greek and Phoenician populations in the past, which made the local people know this wonderful plant. The resulting production is almost exclusively from the grinding of olives of the "Carpellese" variety, an ecotype that has always been cultivated in this area and from a 20% of olives of the "Frantoio" variety.
The respect of the severe principles of the production procedures specification totally guarantee the quality of the outcome, but also the traceability of the product itself, giving to the consumer the full confidence in the fact that they have a nutriment exclusively obtained from olives cultivates within the farm itself.
The olives are collected manually and grinded within 24 hours in the company olive-press that uses the best oil technologies on the market, which combine the traditional granite grindstones with the extremely modern kneaders in nitrogen environment. The cold extraction is made with temperatures around 27°, preserving, in this way, the organoleptic characteristic typical of the extra-virgin olive oil.
Features of the oil::
The oil has a colour varying from green to more or less intense straw yellow. Its scent is very fruity, characterized by rich green tones, with hints of just mowed grass. The tasting reveals bitter tones with a slightly hot aftertaste.
